Wild Mushroom, Bulgarian Feta & Pine nuts Tartlets

Ingredients

  • Shitake mushrooms
  • Enoki mushrooms
  • Bottom mushrooms
  • ¼ bunch thyme
  • 50ml olive oil
  • Pine nuts
  • 3ml lemon juiced and zest
  • 150gm Bulgarian Feta cheese
  • 2 sprigs shallots (spring onion)
  • Tartlets shells
  • Salt and pepper

Method

Step 1: Peel and take stem off all mushrooms.

Step 2: Slice mushrooms and Shallots thinly.

Step 3: Heat oil in frying pan on medium heat and sauté all mushrooms, shallots and thyme leaves for approx 6 minutes season with salt and pepper.

Step 4: Place all mushroom mixture in a mixing bowl and mix with crumble feta cheese, pine nuts and lemon juice.

Step 5: Fill tartlets shell with wild mushroom mixture and garnish with roasted pine nuts.

Step 6: Neatly arrange tartlets on platters and serve.
