Sumac Crusted Lamb on Crustini Bread with Cucumber Raita Sauce

Ingredients

  • 500gm lamb loin
  • 50gm sumac spice
  • 1 long baguettes
  • 10ml olive oil
  • 2 cloves garlic
  • Salt and pepper

Cucumber Raita sauce

  • 100gm plain yoghurt
  • 3 cucumbers
  • 1 garlic clove
  • 1 lemon, juiced
  • 1 tsp ground cumin
  • Salt and pepper

Method

Step 1: Rub lamb loin with sumac spice.

Step 2: BBQ lamb for 7-8 min on each side (for medium rare).

Step 3: Once cooked, place aside in warm place to rest.

Step 4: Slice lamb loin diagonally to 1/2cm thick pieces prior to serving.

Step 5: Cut bread into 1cm thick slices, rub with olive oil, garlic and BBQ to golden brown on both sides.

Cucumber Raita Sauce

Step 1: Peel cucumber and take seeds out with spoon (see demonstration). Grate cucumber and place in a mixing bowl.

Step 2: Cut garlic finely and add to mixture with rest of ingredients.

Step 3: Mix yoghurt sauce well and season to taste.

To Assemble

On a platter, place grilled bread slices, top with sliced lamb and finish with Raita sauce.
