Chocolate Fondant

Ingredients

  • 3 eggs
  • 75gm butter
  • 175gm dark cooking chocolate
  • 20gm plain flour
  • 12gm coco powder
  • 1-teaspoon ground coffee
  • Meringue
  • 3 egg whites
  • 50ml water
  • 50gm sugar

Method:

Step 1: Butter and sugar ramekins or 24cm baking tin

Step 2: Separate eggs yolk from white.

Step 3: Make meringue;

Step 1: Boil sugar and water.

Step 2: Place egg whites in mixer and whisk to soft peak.

Step 3: While whisking, add boiling syrup gradually.

Step 4: Whisk egg white on high speed for 6-8 minutes. Set aside.

Step 4: Place chocolate in heatproof bowl and set over a saucepan of barely boiling water (bain-marie) stirring occasionally until chocolate has melted. Take off heat and allow reaching room temperature.

Step 5: In a large mixing bowl, mix egg yolks and butter until combined.

Step 6: Sieve flour, coco and coffee together.

Step 7: Whisk the flour mixture into the yolks and butter.

Step 8: Fold chocolate well followed by meringue.

Step 9: Place mixture in ramekins or cake tin and bake in hot oven 190'C for approx 15 minutes. Mixture should be very soft in centre.
