Ingredients
- Apples
- 400 gm sugar
- 700ml water
- 1 cinnamon sticks
- 5 cloves
- 2 star anise
- 1 Zest of lemon or orange
- 250 gm Berries
- Vanilla Ice cream
- Cinnamon powder
Apple Baskets
Step 1: Make sugar syrup by boiling sugar, water, cinnamon and citrus zests in saucepan
Step 2: Peel apple and cut in half, take pulp out. See demonstration
Step 3: Blanch apple baskets in boiling sugar syrup for 1 min and take out.
Step 4: Drain, place in fridge to cool down.
Mixed Berry Mixture
Step 1: Place all berries into a bowl and pour some hot sugar syrup on it for approx 5-10 mins
Step 2: Separate berries from liquid
Step 3: Bring berries liquid to boil and reduce to ¼ of original volume or until it covers the back of spoon. Let it cool down and use as a sauce
Step 4: Place berries in the cold apple baskets and present on serving platter
Step 5: Place ice cream scoops in between apple baskets and sprinkle with cinnamon powder
