Quince is related to apples and pears, and like them has a pomefruit, which is bright golden yellow when matured. Origin:Subtropical rainforest and dry rainforest in the coastal border region of Queensland and New South Wales, Australia. Selecting:Quinces can be round, oval or somewhat pear shaped. Their appearance resembles a golden apple or pear. Choose those that are firm with a pale yellow skin. The yellow skin is often somewhat mottled with brown spots that don't affect the flavour or quality. Quinces that are shrivelled, soft, or brown all over are no longer fresh. Storage:Don't put your quinces in the refrigerator – their aroma will penetrate other food. They'll keep for several months if stored in a single layer at room temperature. They also bruise easily, so treat them with care.
