On behalf of ZIGI'S team I would like to wish you all Merry Christmas and safe and happy New Year. Thank you for all your support during 2010.
The festive season brings upon us a very busy period with lots of private dining and cooking classes. It is great to see that the general public are more aware of what they eat from health and freshness perspective.
We hosted our annual Christmas dinner party at Camperdown which was a huge success. At the same time we launched our new line of olive oil and pomegranate and barrel aged balsamic vinegars for which we teamed up with Pakura Estate from the Hunter-Valley. In January we will have our ZIGI'S olive oil and balsamic vinegars for sale on our website
In January we are also starting our scheduled cooking classes with lots of great chefs to host various classes from 'Cook to Impress' (a three course meal) to four weeks of 'ABC of cooking'. As well will we have Asian, seafood, gourmet sausages classes and more. Tune in January 2011 and all will be available on the website.
People are now starting to recognise the importance of sustainable cooking and lifestyle in general, so I have chosen to highlight edible flowers. It's a popular trend and there is nothing more spectacular in today's culinary world than to add some colourful petals to a salad or simply place a flower or two on a dish as a decoration. It's a brilliant way of enhancing your plate with the WOW factor, but a word of precaution is required. Make sure you get the correct flower/s as a lot of them are actually poisonous and should never be used, even as a decoration.
All culinary herbs used to flavour foods have edible flowers and can be enjoyed in a variety of ways.
SOME SIMPLE RULES TO FOLLOW:
- Never purchase flowers to eat from a florist. Commercially grown flowers are grown with chemicals and pesticides.
- Ensure the plant has been grown organically and hasn't been sprayed or subjected to trail of traffic fumes and dust – this goes for all edibles.
- Positively identify flowers before eating them. Some look-alikes aren't edible.
- Never eat a flower if you don't know what it is. Be cautious when selecting flowers to eat - many flowers taste bad, some are quite poisonous. Better safe than sorry.
- Pick freshly opened flowers early in the morning when they are cool, plump, crisp and full of flavour and nutrients.
- Remove stamens and pollen from each bloom. Only petals should be used. only a few flowers can be eaten in their entirety. These include, pansies, chives, violas, bean flowers, honeysuckle and violets
- Wash well, making sure to remove any hidden insects! Gently clean, dry on a paper towel and store in the fridge until needed, avoiding crushing.
