Seared Rare Roast Beef With Grana Padano and Balsamic glaze

Ingredients

  • 800gm steak
  • 40gm shaved Grana-Padano cheese (type of parmesan cheese)
  • 300ml balsamic vinegar
  • 300gm shaved carrots

Yield 10 serves

Method

Step 1: Season steak and seal on a hot oiled frypan.

Step 2: Cook steak to medium rare and set it aside to rest in a warm place. (See previous page)

Step 3: Place vinegar in a saucepan and bring to boil. When boiled reduce heat and let simmer until it reaches a sauce consistency - it should coat the back of spoon. Cool down before use.

Step 4: Grate cheese and shave carrots.

To Assemble

Place shaved carrots on bottom of a serving platter, top with thinly sliced meat, sprinkle grate cheese and finish with drizzle of balsamic glaze.
